Pumpkin Pie (soy) |
INGREDIENTS
- 2 large eggs
- 1 1/4 cups Silk Pumpkin Spice ( I replaced with regular Vanilla Soy)
- 2/3 cup sugar ( you can replace with the baking splenda for a sugar free version for regular pie, omit with pie filling)
- 1 tsp. pumpkin pie spice (omit with pumpkin pie filling)
- 1/2 tsp. salt (omit with filling)
- 1 (15-oz) can pumpkin (not pumpkin pie filling) ( replaced with Libby's pie filling)
- 1 (9-inch) unbaked pie crust
PREPARATION
1. Preheat oven to 425 degrees. 2. In a large bowl whisk together eggs and Silk. Whisk in sugar, spice and salt. Add pumpkin, whisking until smooth. 3. Pour into prepared crust.
4. Bake 15 minutes then turn down oven to 350 degrees. Bake for an additional 40-50 minutes until filling is set and a knife comes out clean. 5. Cool and served with whipped cream or non-dairy whipped topping.

this is a hit with my daughter, son, and mother. THis is worth testing out.
